Antioxidant Booster Smoothie

A beautiful spring-like day calls for a refreshing smoothie and I was craving my favorite fruit, blueberries!

Blueberries are a super-fruit loaded with many nutrients and are ranked highest for their antioxidant content. (Antioxidants help neutralize toxins and free radicals that may cause diseases and accelerate the aging process).

Blueberries are low on the glycemic index and are a good source of fiber, which helps regulate the digestive tract and maintain healthy weight. Vitamins, minerals, and some of the antioxidants in blueberries have also shown to be beneficial for the skin, eyes, heart, and brain health.

Blueberries work great fresh or frozen, which makes super easy to have it handy in the freezer year round. It is best to buy organic blueberries when possible, to avoid all those nasty fertilizers and chemicals that can reduce the beneficial properties.

Ingredients:

1 cup baby spinach

1 carrot

12 cashews

1 cup or more filtered water

4-5 slices of cucumber

1/2 fresh or frozen banana

3/4 cup frozen blueberries

2 dates (optional)

2 tsp maca powder (optional)

Method:

Blend the water, spinach, carrot, and cashews together. Make sure to do these ingredients in two steps, as the cashews and carrots take time to blend.

Then add in the cucumber, banana, blueberries, dates, and maca powder, and blend until smooth. Enjoy!!!

note: Adjust the amount of water depending on how thick or thin you like your smoothie.
