Bean Burgers

I am always looking to add variety and yumm-iness to my kids lunch box and since we try to practice Meatless Mondays most of the time, this bean burger recipe is my lifesaver. It’s easy to make and also freezes well, so I have got my Mondays sorted out.

All I have to do is microwave the patty to defrost, and then it’s just putting it together like a normal burger.

Ingredients:

2 14oz cans of beans (black beans or kidney beans)

2 large carrots, grated

1/2 cup oats flour

1 tsp cayenne pepper

2 tbsp ground flaxseeds

1 tsp cumin powder

1 tsp garlic powder

salt to taste

1-2 tbsp olive oil for shallow frying

few drops of fresh lemon juice (optional)

Method:

Process the beans in a food processor until they are slightly mushed. Transfer the beans to a big mixing bowl and add in the remaining ingredients. Mix well and shape them into patties of desired size. In a shallow frying pan, heat a tbsp of olive oil and cook the patties for about 5 min on each side on medium heat. Allow the patties to cool before freezing them, with layers of parchment paper in between to prevent sticking.
