Cashew and Ginger Energy Balls

Energy balls are perfect for a snack on the go. They are readily available in health food stores and supermarkets, but often they are loaded with sugar. Although there are some good quality ones available but sometimes they hard to find easily in regular supermarkets and are a bit pricey. However, you can easily make these at home with a few ingredients that you might already have in your pantry/cupboard.

These cashew and ginger energy balls are sweetened with medjool dates which also provide fiber and nutrients such as potassium, magnesium, phosphorus, and calcium. 

Ingredients:

1/2 cup raw cashews

1/2 cup sunflower seeds

1 cup medjool dates, pitted and chopped

1 cup desiccated coconut

3-4 teaspoons ground ginger

1 -2 tablespoons maca powder (optional)

pinch of nutmeg (optional)

Method:

Soak cashews in water for 20-30 minutes. In a food processor, grind the sunflower seeds, cashews, and desiccated coconut. Then add in the ginger, nutmeg, maca and the dates until the mixture looks like a sticky dough. Roll the mixture into equal sized balls by hand. 

Store them in an airtight container in fridge or on your kitchen counter for up to a week.
