Cashew and Ginger Energy Balls

Energy balls are perfect for a snack on the go. They are readily available in health food stores and supermarkets, but sometimes the good quality ones are a bit pricey. However, you can easily make these at home with a few ingredients that you might already have in your pantry/cupboard.

Ingredients:

1/2 cup raw cashews

1/2 cup sunflower seeds

1 cup medjool dates, pitted and chopped

1 cup desiccated coconut

3-4 teaspoons ground ginger

1 -2 tablespoons maca powder (optional)

pinch of nutmeg (optional)

 

Method:

Soak cashews in water for 20-30 minutes. In a food processor, grind the sunflower seeds, cashews, desiccated coconut, dates, ginger, nutmeg, and maca until the mixture looks like a sticky dough. Roll the mixture into equal sized balls.

Store them in an airtight container in fridge or on your kitchen counter for upto a week
