Fig and Cherry Energy Bites

Snacks are an important part of a diet and can actually be beneficial in that they regulate blood sugar levels and give you a boost of energy to keep you going till your next meal. Energy bars/bites are one of my favorite snacks; made with few ingredients such as nuts, seeds, dried fruit, toppings and spices of choice. I like trying out different combinations and this recipe features my all time favorite…. FIGS!!

Ingredients:

1 cup unsweetend dried figs, chopped

1 cup soft medjool dates, pitted and roughly chopped

2 cups cashews

1 cup dried cherries

1/2 cup walnuts

2 tbsp raw cacao

1-2 tsp cinnamon powder

1/4 cup dried desiccated coconut (optional)

Method:

Soak the dates and figs in water for 15 minutes. In the meantime, process the nuts in a food processor to desired texture. Drain the dates and figs and add them to the food processor, along with the cherries, cacao, and cinnamon powder; process till it looks like a sticky dough.

Transfer the dough to a bowl, make small balls of desired size, and roll in the desiccated coconut (optional). Store in an airtight container in the fridge and enjoy when hunger strikes.

    Tried this reciepe its sure is yummy & healthy. I added 2tbsp of honey so the kids eat as well. They all enjoyed it.
